Most food trucks that succeed in Los Angeles eventually face the same pressure: add more to the menu. More entrees, more sides, more categories to compete with the truck parked next to you. FryDay took the opposite approach from day one — loaded fries, and only loaded fries, built around a small set of signature flavors. That decision wasn't an accident, and it's still the reason the brand looks the way it does today.

When FryDay started in Van Nuys on July 4, 2019, the choice to build the entire menu around one format — gourmet loaded fries — was about depth over breadth. A truck that does one format extremely well can put all of that same attention into a handful of flavors instead.
That's the trade FryDay made: instead of a menu with twenty items done adequately, four loaded fries flavors — Nashville Hot Chicken, Caribbean Jerk, Mango Habanero, and BBQ Bacon — done as well as we know how to do them.
Why Loaded Fries Specifically
Loaded fries work as a format because they're flexible without being complicated. The base is simple and consistent — fries, done right, every time — and the flavor identity comes from what goes on top. That structure let FryDay build a menu that's globally inspired (Nashville heat, Caribbean spice, a sweet-and-heat mango habanero, classic American barbecue) without needing a different kitchen setup or cook process for each one. It's also a format that travels well at events, holds up under a heat lamp, and photographs the way people want food to look when they're posting about your event afterward.
What Staying Focused Has Let Us Do
Keeping the menu tight freed up FryDay to focus on where the food shows up instead of constantly expanding what's on it. That's part of how the truck ended up serving crowds at NBA All-Star Weekend, the LA Dodgers Divisional Playoffs, the BET Fan Experience, LA Galaxy events, UCLA, and LAUSD campuses — a small, dialed-in menu is easier to execute consistently at high volume than a sprawling one, and consistency is what gets a food truck invited back to the events that matter.
It's also what allowed FryDay to grow into a ghost kitchen model alongside the truck — the same four flavors, prepped the same way, whether a customer is ordering for pickup or delivery or booking the truck for a 300-person corporate event.
How a Small Menu Simplifies Training and Consistency
There's a practical side to this too. A crew that has to execute four flavors extremely well can actually train to that standard — everyone on the line knows exactly what a correct plate looks like, because there are only four correct plates to know. A twenty-item menu makes that kind of consistency much harder to hold onto, especially at a high-volume event where speed matters as much as quality. Staying focused isn't just a brand decision; it's an operations decision that shows up in how consistent the food tastes whether you're ordering from the truck window or booking us for a 300-person event.
