What Gourmet Really Means for Loaded Fries: How FryDay Cooks and Serves Los Angeles

The word gourmet gets used a lot, sometimes loosely. On a food truck it can sound like a promise or like a marketing flourish. So it is fair to ask what we actually mean when we call FryDay a gourmet loaded fries food truck. The short answer is that for us it describes a way of cooking and serving rather than a price tag or a pose. Here is how we think about it.

FryDay was founded on July 4, 2019 in Van Nuys by Theophilos "Theo" Okuribido, and we have grown into a food truck and ghost kitchen serving Los Angeles. Along the way we have fed crowds at events including NBA All-Star Weekend, the LA Dodgers Divisional Playoffs, the BET Fan Experience, LA Galaxy matches, UCLA, and LAUSD. Whatever the setting, the idea behind the food stays the same.

Gourmet starts with taking a simple food seriously

Fries are one of the most familiar foods in the world. Everyone has an opinion about them, and almost everyone has eaten them from a paper tray at some point. That familiarity is exactly why they reward care. When you treat a simple food seriously, small decisions start to matter.

  • How the fries are cooked and when they are served
  • How toppings are layered so each bite stays balanced
  • How sauce is used to add flavor without drowning the base
  • How heat, sweetness, richness, and salt are kept in proportion

None of that requires fancy language. It requires attention. Gourmet, to us, means someone paid attention.

Four flavors, each with a point of view

Our menu is intentionally focused. We lead with four signature flavors: Nashville Hot Chicken, Caribbean Jerk, Mango Habanero, and BBQ Bacon. Each one is meant to taste like itself, with its own balance and personality.

Nashville Hot Chicken brings bold, spicy energy. Caribbean Jerk is warm and aromatic with a lively kick. Mango Habanero plays sweetness against heat. BBQ Bacon is smoky and comforting, the one that feels like a hug. Keeping the menu focused lets us concentrate on making each flavor work rather than spreading ourselves across dozens of options.

Gourmet is also about the experience at the window

A great dish can be undone by a rushed or careless moment at the window. Hospitality is part of what we mean by gourmet. That means a friendly greeting, patience with first-timers who want to ask about heat, and a willingness to help someone choose rather than just take the order. It also means keeping the line moving at busy events without making anyone feel like a number.

We think about this a lot because many of our guests meet FryDay for the first time in a crowd. They are at a concert, a school event, a wedding, or a company lunch. The first thirty seconds with the crew shape how they feel about the food.

Handheld does not mean casual about quality

Loaded fries are made to be eaten standing up, walking around, or sitting on a curb with friends. That relaxed format is part of the charm, and it fits Los Angeles well. But a casual format does not have to mean casual standards. A food truck window is a kitchen, and a kitchen can take pride in its work whether the plate is china or a paper tray.

Part of the reason loaded fries suit event catering is that they can be served fresh and fast while still feeling special. Guests get something that tastes made for them, in a format that does not slow the party down.

Roots in Van Nuys, reach across Los Angeles

Our story begins in Van Nuys, and we are proud of it. Los Angeles is a city of neighborhoods, and each one has its own flavor and its own crowds. Serving that variety has shaped how we cook and how we show up. We bring the same approach to a school fundraiser, a corporate lunch, a sports crowd, or a backyard celebration: focus on the food, treat people well, and be dependable.

The ghost kitchen side of the business follows the same philosophy. Ordering from the kitchen is a different experience from standing at the truck, but the standard we aim for is the same. The goal is for the food to arrive tasting like something we would be happy to hand you ourselves.

What gourmet does not mean

It does not mean complicated for the sake of it. It does not mean unfriendly or exclusive. And it does not mean that the food belongs only to special occasions. We would much rather you think of FryDay as a place that makes an ordinary craving feel a little more thoughtful. You should be able to order on a lunch break and feel like someone cared about your fries.

How to taste the idea for yourself

If you are curious, the best test is simple. Choose a flavor that sounds appealing, eat it while it is fresh, and notice the balance. Is there contrast between the soft and the crisp, the rich and the bright, the heat and the sweet? If you are trying more than one flavor, compare them. That kind of attention is what we mean when we say gourmet, and we hope you can taste it.

The takeaway

Gourmet at FryDay is not a fancy label. It is a commitment to making a familiar food with care, serving it with warmth, and showing up reliably for the people of Los Angeles. Four focused flavors, thoughtful layering, and a welcoming window are how we try to earn the word every day.
