Rooted in Van Nuys, Serving All of LA: How FryDay's Food Truck and Ghost Kitchen Grew From the Valley

FryDay was founded on July 4, 2019, in Van Nuys, by Theophilos "Theo" Okuribido. Today the brand runs as both a food truck and a ghost kitchen, and the two sides of the business share the same roots. This post looks at how starting in the San Fernando Valley shaped the way FryDay thinks about food, service, and community across Los Angeles.

A Valley Start With a City-Wide View

Van Nuys sits in the middle of the San Fernando Valley, and the Valley is a place where neighborhoods, families, and local businesses lean on one another. Starting there set a tone: be a good neighbor, serve food people actually want, and treat every customer like part of the community. Los Angeles is huge and varied, and a kitchen that begins in one neighborhood still has to meet the whole city, from backyard parties to big public events.

Why a Truck and a Kitchen Work Together

A food truck brings the experience to the people. A ghost kitchen brings the food to the people who would rather order from home or the office. FryDay does both. The truck is the face of the brand at events, and the kitchen gives customers another way to enjoy the same loaded fries. Having both means the menu has to hold up in different settings, whether it is handed through a truck window or packed for pickup and delivery. That demand pushes us to keep the menu focused and consistent.

A Focused Menu on Purpose

FryDay's menu is built around four signature flavors: Nashville Hot Chicken, Caribbean Jerk, Mango Habanero, and BBQ Bacon Loaded Fries. A tight menu is not a limitation. It lets the team repeat the same things at a high standard, whether serving a small party or a large crowd. When the crew knows every flavor inside and out, the line moves and each tray comes out the way it should.

Experience Feeding LA's Big Moments

FryDay has served at some of the city's well-known occasions, including NBA All-Star Weekend, the LA Dodgers Divisional Playoffs, the BET Fan Experience, and events with the LA Galaxy, UCLA, and LAUSD. Each of these environments teaches something different about pace and preparation. What they have in common is that guests are excited, hungry, and ready for something fun to eat. That is exactly where loaded fries shine.

What Staying Rooted Means

As FryDay grows, the aim is to stay connected to the people and places that made it possible. For us, that means celebrating the cultures that influence the menu, showing up for the community, and keeping the experience warm and welcoming. A brand can only stay genuine if it remembers where it started. For FryDay, that is Van Nuys and the people who supported it from the first day.
