Proud of Our LA Roots: How Los Angeles Neighborhoods Shape the Way FryDay Runs the Truck and the Ghost Kitchen
Every food business has a point of view, even if nobody ever writes it down. At FryDay, ours starts with where we are from. We were founded on July 4, 2019, in Van Nuys, by Theophilos "Theo" Okuribido, and the city around us has shaped how we run the truck and the ghost kitchen ever since. This post is a look at what that LA pride means in practice, and why it keeps pointing us back toward the neighborhoods, schools, teams, and gatherings that make Los Angeles what it is.
Los Angeles Is Not One Place
Anyone who has lived here knows that Los Angeles is really a collection of neighborhoods. A Saturday in Van Nuys feels different from a Saturday on the Westside, which feels different from one near a campus or a ballpark. People are proud of their corner of the city, and they should be.
That variety is part of why a mobile food business fits Los Angeles so well. A truck can go where people are gathering, whether that is a school event, a company lunch, a sports occasion, or a family celebration. Over the years, FryDay has had the chance to serve crowds at events like NBA All-Star Weekend, the LA Dodgers Divisional Playoffs, the BET Fan Experience, and LA Galaxy games, as well as at UCLA and LAUSD events. Each setting asks for something a little different, and that keeps us learning.
Rooted in the Valley, Open to All of LA
Van Nuys is where FryDay started, and it is still home. There is something grounding about being built in a neighborhood and not just in a concept. It reminds us that the people we feed are neighbors, not just customers.
That perspective shapes small decisions. We think about how a line looks from the sidewalk, how welcome a first-timer feels at the window, and how a school family or a work team might want the day to go. Those are neighborhood questions, and they come from being a part of one.
Two Ways to Reach the City
FryDay works as both a food truck and a ghost kitchen. The truck brings the experience to events and gatherings. The ghost kitchen makes it easy to order loaded fries for pickup or delivery when you would rather stay in. Together they let us meet people where they are, whether that is at a venue, at an office, or at home.
Both share the same heart: gourmet loaded fries, built around four signature flavors, Nashville Hot Chicken, Caribbean Jerk, Mango Habanero, and BBQ Bacon. The flavors reflect a city that loves bold food and welcomes influences from many places.
Community First Is a Habit, Not a Slogan
It is easy to say that community comes first. It is harder to build it into how a business operates. For us, it shows up in simple habits:
- Showing up on time and ready, because people plan their events around us.
- Keeping the menu focused, so every plate gets our full attention.
- Treating each window like a small neighborhood meeting place.
- Listening to hosts, teachers, coaches, and organizers about what their event needs.
- Remembering that a loaded fries order is often part of someone's celebration, not just a snack.
None of those habits is flashy, but they add up. A host who feels listened to and a guest who gets a hot, fresh plate are the reasons a business like ours exists.
What We Hope Angelenos Take Away
We would like people to leave a FryDay window feeling that the food was good, the experience was easy, and the moment felt a little more like a celebration. Los Angeles is a city that loves to gather, and we feel lucky to be part of the table.
If you have been to a FryDay event, thank you. If you have not, we would love to hear what your next gathering looks like and see how we can be part of it. Our catering team can help with private events, corporate gatherings, weddings, school and sports events, and quinceañeras across the city.
Why Small Moments Matter as Much as Big Ones
It is easy to talk about the large events, but plenty of what we do happens on a smaller scale. A teacher appreciation lunch, a youth team celebrating the end of a season, a family marking a milestone, or an office thanking its crew all deserve the same care as a headline event. The scale changes, but the work is the same: show up prepared, serve food that is hot and fresh, and make the experience easy for the host.
That is also why we try to keep our approach simple. Loaded fries are handheld and shareable, which suits the way people gather in Los Angeles: standing, talking, moving around, and catching up. A good plate of fries does not demand a formal table, and it gives people something to enjoy together while the real point of the day, the people, takes center stage.
Looking Ahead
As the season changes and more gatherings land on the calendar, we are thinking about the people who plan them. Hosts have a lot to juggle, and we would like to be the part of the event that feels easy. If you are organizing something, large or small, tell us about your guests and your schedule. We will take it from there.
