Today we're pulling back the curtain on how loaded fries are made at FryDay, from our home base in Van Nuys to every event we cater across Los Angeles.

The San Fernando Valley taught us hustle. The crowds at NBA All-Star Weekend, the LA Dodgers Divisional Playoffs, the BET Fan Experience, and LA Galaxy matches taught us consistency at volume. Feeding students at UCLA and events across LAUSD taught us how to keep quality up when the line never stops. Every event made the recipe book better.
From Food Truck to Ghost Kitchen — Same Standards, More Ways to Get It
These days FryDay runs both a food truck and a ghost kitchen out of Van Nuys, which means the same fries we serve at a wedding in Pasadena or a corporate lunch in Burbank are available for online ordering too. Running a ghost kitchen forced us to answer a hard question: how do loaded fries survive a delivery drive? The answer came down to packaging strategy, sauce handling, and building the fry to travel.
