The food. Every FryDay catering package is built on our signature loaded fries. Hand-cut style fries as the base, then a topping build that goes far beyond cheese and bacon bits. Our core lineup includes:
- Nashville Hot Chicken Loaded Fries — crispy chicken, our cayenne-forward hot oil, pickles, and a cooling drizzle. The one people take photos of.
- Caribbean Jerk Loaded Fries — jerk-marinated protein, warm allspice and scotch bonnet heat, bright and layered.
- Mango Habanero Loaded Fries — sweet heat, tropical and sharp at the same time. A gateway flavor for guests who "don't do spicy."
- BBQ Bacon Loaded Fries — the comfort pick. Smoky, sweet, familiar, and the one that disappears fastest at family events.
Everything around the food. Catering isn't just a menu, it's an operation. A FryDay booking includes the truck (or our mobile setup for indoor and venue-restricted spaces), a trained crew, all serving materials, on-site cooking so nothing is pre-plated or sitting under a heat lamp, setup, and full breakdown. We arrive early, we handle our own power and prep where the venue allows, and we leave the space the way we found it. For venues with strict load-in windows — a lot of Santa Monica and Downtown LA spaces have them — we plan around the window rather than asking you to fight for an exception.
How Customization Works on the FryDay Catering Menu

Service style. We run three main formats. Continuous service keeps the window open for a set number of hours and guests come as they get hungry — ideal for block parties, open houses, and graduation parties where people trickle in. Timed service concentrates everything into a window, which is what most weddings and corporate lunches want. Late-night service is the wedding-reception favorite: we roll up near the end of the night and feed people who've been dancing for three hours.
Flavor mix. Most events run two to four flavors. The mix matters more than the count. A corporate lunch in Glendale with a mixed team usually does best with BBQ Bacon plus Mango Habanero — one safe, one adventurous. A birthday party in Pasadena where the crowd skews younger can lean harder into Nashville Hot. Quinceañeras and family events in the San Fernando Valley almost always want a full spread so every generation finds something.
Dietary needs. Tell us up front and we build around it. Vegetarian builds, protein swaps, and heat-level adjustments are all standard requests, not special favors. We'd rather know two weeks out than find out on site.
Portion planning. Loaded fries are shareable by nature, which changes the math versus plated catering. We'll walk you through headcount versus service hours versus whether this is the main meal or a supporting act. A late-night wedding bite for 120 people is a completely different build than a full lunch for 120.
Branding and presentation. For corporate and industry events, we can coordinate on presentation details so the setup fits the look of your event rather than fighting it.
