The FryDay food truck — an LA original from Van Nuys
From Van Nuys to NBA All-Star Weekend: The FryDay Food Truck Origin Story
Every great LA story starts somewhere local, and the FryDay food truck in Van Nuys is no exception. On July 4, 2019 — Independence Day, fittingly — Theophilos "Theo" Okuribido fired up the fryer for the first time and set out to do one thing exceptionally well: build the best gourmet loaded fries in Los Angeles. What started as a single truck in the heart of the San Fernando Valley has since rolled onto some of the biggest stages in the city, from NBA All-Star Weekend to LA Dodgers playoff games. This is the story of how a Van Nuys food truck became one of LA's most-loved names in loaded fries.
It Started in the Valley
The San Fernando Valley has always been the beating heart of LA's food truck culture, and Van Nuys is right in the middle of it. That's where FryDay was born, and it's where we still call home. The idea was simple but ambitious: take the humble french fry and turn it into a canvas for bold, globally-inspired flavors. No boring sides, no afterthought fries — these would be the main event.
From day one, the FryDay food truck in Van Nuys was about more than food. It was about community. We wanted to be the truck people looked forward to seeing pull up, the one that turned an ordinary afternoon into something worth gathering around. That community-first spirit is still the engine behind everything we do.
Building a Menu That Travels the World
LA is one of the most diverse food cities on earth, and our menu reflects that. We built our signature loaded fries to take your taste buds on a trip without leaving the city. Our Nashville Hot Chicken Loaded Fries bring Southern fire. Our Caribbean Jerk Loaded Fries carry the smoky, spiced soul of the islands. Mango Habanero delivers that perfect sweet-heat combo, and BBQ Bacon Loaded Fries are pure comfort. Each one is a love letter to the cultures that make Los Angeles the food capital it is.
That diversity is intentional. When you grow up around the Valley and greater LA, you eat from every corner of the world, and we wanted our truck to celebrate that. The FryDay food truck in Van Nuys isn't just serving fries — it's serving the flavor of the whole city.
From Local Truck to the Big Leagues
Word spread fast. What began as neighborhood love grew into something bigger than we imagined. FryDay has had the honor of feeding fans at NBA All-Star Weekend, one of the most electric events in sports. We rolled up for the LA Dodgers Divisional Playoffs, serving loaded fries to a stadium full of die-hard fans. We've been part of the BET Fan Experience, brought the heat to LA Galaxy matchdays, and served crowds connected to UCLA and LAUSD events across the region.
Each of those moments meant the world to us, because they proved something: a food truck that started in Van Nuys could stand shoulder to shoulder with the biggest names at the biggest events in LA. But no matter how large the stage gets, we never forget where we came from. The same fries we serve at a packed stadium are the same fries we bring to a backyard birthday in Pasadena or a quinceañera in Glendale.
Still Rooted in Community
Today, FryDay operates both as a food truck and a ghost kitchen, serving up loaded fries for private events, catering, and online orders across Los Angeles. We've grown, but our roots in the San Fernando Valley keep us grounded. We're proud to be an LA original — proud of our city, proud of the diverse communities we serve, and proud to be the truck that shows up ready to celebrate.
Whether you found us at a major event or you're discovering the FryDay food truck in Van Nuys for the first time, the invitation is the same: come hungry, come ready to have a good time, and let us show you what loaded fries are supposed to taste like.
Bring the FryDay Story to Your Event
Our journey from a single Van Nuys truck to LA's biggest stages happened because people invited us to be part of their celebrations. We'd love to be part of yours. From corporate events in Burbank to weddings in Long Beach to block parties across the Valley, we bring the same passion that fired up that very first fryer back in 2019.
