Meet the FryDay Food Truck Team
Behind the Apron: Meet the FryDay Team Serving LA One Fry at a Time
Every plate of loaded fries has a story behind it, and the FryDay food truck team has been writing ours across Los Angeles since 2019. You've maybe seen the truck at a festival, ordered from our ghost kitchen in Van Nuys, or caught us at a backyard party in the Valley — but today we're pulling back the curtain. This is who we are, where we came from, and why we do what we do.
Where the FryDay Food Truck Team Story Begins: Van Nuys, July 4, 2019
FryDay was founded by Theophilos "Theo" Okuribido on the Fourth of July, 2019 — a launch date that felt right for a business built on celebration. The idea was simple but ambitious: take the humble french fry, the most beloved food on any menu anywhere, and treat it like it deserves headliner status. Load it with globally-inspired flavors. Serve it hot, fresh, and generous. Do it in Los Angeles, the best food city in the world, and do it with pride in where we're from.
Van Nuys and the San Fernando Valley aren't always the first places people name when they talk about LA's food scene, and that's exactly why we rep them so hard. The Valley is where working LA lives — every culture, every language, every kind of family. That mix is our menu's DNA.
The Flavors That Made Us: A Menu With a Passport
Ask anyone on the FryDay food truck team what makes our fries different and you'll get the same answer: we don't do boring. Every signature flavor is a tribute to a food culture that shaped us and shaped this city.
Nashville Hot Chicken Loaded Fries brings that legendary Southern heat, stacked over crispy fries until it becomes something entirely LA.
Caribbean Jerk is island soul — bold spice, deep flavor, and a reminder that LA's food story is a global one.
Mango Habanero is our sweet-heat signature, the flavor first-timers order on a dare and regulars order on repeat.
BBQ Bacon Loaded Fries is the comfort classic — smoky, rich, and the proof that a crowd-pleaser doesn't have to be predictable.
Behind every one of those recipes are hours of testing, tasting, arguing (lovingly), and testing again. When you're a small team, every item on the menu is personal.
From the Valley to the Big Stage
The FryDay team has had some pinch-us moments over the years. We've served fans at NBA All-Star Weekend. We fed the crowds during the LA Dodgers Divisional Playoffs. We've been part of the BET Fan Experience, served LA Galaxy supporters, catered UCLA events, and rolled up to LAUSD school fundraisers across the district.
Those big stages matter to us — but honestly, so does every backyard birthday in Pasadena, every quinceañera in the Valley, every office lunch in Burbank or Glendale, and every wedding from Santa Monica to Long Beach. A crowd of 50 gets the same energy as a crowd of 5,000. That's not a slogan; it's just how the team operates. Everyone on this truck knows that the event we're catering today might be the most important day of someone's year.
What "Community-First" Actually Means to Us
A lot of businesses say community-first. Here's what it looks like from behind our window:
It means remembering regulars' orders at the ghost kitchen. It means school events where we make sure the fundraiser actually raises funds. It means showing up for neighborhood block parties in the same city that gave us our start. It means hiring and training people from our own community and building a team that looks like LA — because it is LA.
Food trucks occupy a special place in this city's culture. We're small businesses you can walk right up to. You see the people making your food, and we see you. That face-to-face connection is why we chose a truck over a storefront, and it's why, even as our catering and ghost kitchen operations have grown, the truck is still the heart of FryDay.
The People You'll Meet at the Window
When you order from FryDay, you're not talking to a cashier reading a script — you're talking to people who genuinely love this. The team debates flavor ideas on slow afternoons. They hype up first-timers trying Nashville Hot. They learn the rhythms of every neighborhood we serve, from Santa Monica beach crowds to Valley families ordering for a house full of cousins.
That's the FryDay food truck team. Proud of our food, proud of our city, and grateful every single day that LA keeps showing up to our window.
Come Be Part of the Story
Five-plus years in, the best part of this journey is that it's still being written — and every event we cater adds a page. Whether it's your wedding, your company lunch, your kid's graduation party, or your quinceañera, the FryDay food truck team would be honored to bring the flavor.
