Every order that leaves our window has a name and a face behind it. Not a logo, not a corporate kitchen somewhere out of state — actual people from the San Fernando Valley who show up before sunrise, load the truck, and drive across Los Angeles to feed a crowd that hasn't even woken up yet. That's the part of this business nobody photographs. So today we're pulling back the curtain on the FryDay food truck team — the crew that turns a parking lot in Van Nuys into the best-smelling block in the city.
FryDay started on July 4, 2019, when Theophilos "Theo" Okuribido decided Los Angeles deserved loaded fries that could hold their own against anything coming out of a sit-down kitchen. What began as one truck and one very stubborn idea has grown into a food truck and ghost kitchen operation that has served NBA All-Star Weekend, the LA Dodgers Divisional Playoffs, the BET Fan Experience, LA Galaxy events, UCLA, and LAUSD campuses. But the trucks didn't do that. The people did.
The Prep Crew: Where Every FryDay Order Actually Begins
Long before the first customer lines up, our Van Nuys ghost kitchen is already humming. This is where the FryDay food truck team does the work that never makes it to Instagram — breaking down cases of potatoes, building sauces from scratch, portioning the Nashville hot chicken that gives our most famous fry its bite.
Our prep crew is the reason Caribbean Jerk Loaded Fries taste exactly the same at a Pasadena backyard graduation party as they do at a Long Beach wedding reception. Consistency isn't luck. It's someone caring enough at 6 a.m. to taste the jerk marinade one more time before it goes in the truck.
There's a rhythm to it that only comes from repetition. The seasoning blends get mixed in the same order every day. The Mango Habanero sauce gets a final check for heat balance — sweet first, then the slow burn — because that flavor is a tightrope and we walk it fresh every morning. If you've ever wondered why our fries hold up under a mountain of toppings instead of collapsing into mush, it's because someone on this crew decided the fry itself was worth obsessing over.
The Window Crew: LA's Friendliest Five Minutes
Here's something we believe deeply at FryDay: the food gets you in line, but the people are why you come back. The crew working the window is trained on the menu, obviously — but the bigger training is on how to treat somebody who's been standing in the Valley heat for ten minutes waiting on BBQ Bacon Loaded Fries.
Los Angeles is one of the most culturally diverse places on earth, and our window reflects that. In a single service in Glendale or Burbank we'll take orders in English and Spanish, explain Nashville hot chicken to somebody trying it for the first time, and talk somebody else into the Mango Habanero because we know they can handle it. That's not a script. That's just how our crew talks to people.
At big events — think a Rose Bowl crowd in Pasadena or a Santa Monica beach party — the window crew is also the crowd manager, the hype team, and the reason the line moves. Anybody who's worked a festival knows that a slow window kills the vibe. Our team has fed thousands at a stretch and kept it moving without ever turning it into an assembly line.
The Event Crew: The FryDay Food Truck Team on the Road
Private events are where the FryDay food truck team really shows what it can do, because every single one is different. A corporate lunch in Burbank has different rules than a quinceañera in the San Fernando Valley, which has different rules than a school fundraiser at an LAUSD campus or a late-night wedding bite in Long Beach.
Our event crew handles the parts most people never think about: where the truck parks, how power gets run, whether the venue needs a smaller footprint, how to serve 300 people in a window that closes when the DJ starts. They've done it at UCLA. They've done it during the LA Dodgers Divisional Playoffs, when the energy in the city was electric and nobody had patience for a slow line. They've done it at the BET Fan Experience and NBA All-Star Weekend, where the crowd came from everywhere and expected LA to show up.
The best compliment we get isn't about the food. It's when a host tells us they didn't have to think about catering once during their own event. That's the crew doing its job.
Why This Team Looks Like Los Angeles
We hire from the Valley and from across LA — Van Nuys, Sherman Oaks, Panorama City, North Hollywood, and beyond. That's not a diversity statement, it's just who's here and who shows up hungry to work. Our menu is globally inspired because our team is, too. Caribbean Jerk didn't come from a trend report. Nashville hot chicken isn't on the menu because an algorithm said so. These flavors are on the truck because people who love them are the ones cooking them.
Food trucks in LA carry a real responsibility. We're one of the few businesses that goes to the neighborhood instead of asking the neighborhood to come to us. Some weeks that means Santa Monica, some weeks it's Pasadena or Glendale, and some weeks it's a school parking lot where the biggest event of the year is a fundraiser. The FryDay food truck team treats all of them like they matter, because they do.
